Text Box: 100ml goat milk
1 cup self raising flour, sifted
1 tbsp sugar
1 egg, beaten
2 tsp butter, melted
Combine flour and sugar in bowl and make a well in the centre
Combine liquid ingredients and add to centre of flour mixture
Stir constantly, drawing in flour to form a smooth batter, Text Box: beat well.
Drop tablespoons of batter onto a heated and lightly greased frying pan.
Cook over medium heat until small bubbles form on surface of each pikelet.
 Turn  over to cook and brown other side.
 Serve with jam and cream.
Makes 12-14 pikelets

1/2 cup honey dew melom, seeded, peeled and cut into chunks or wedges.
1 cup of plain goat milk yoghurt.
Sweeten to taste.
1/2 cup chopped pistachios
Arrange honeydew melon on
 serving plates.
Top each with a dollop of yoghurt (mixed with sweetener if desired)
And sprinkle with pistachios
Text Box: Place peach slices into the base of a casserole dish
Set aside
Cream butter & sugar together in a mixing bowl. 
Mix until  light and fluffy
Beat in egg & vanilla.
 Lightly fold flour into creamed Text Box: 825g can sliced peaches, drained
60g 2oz butter, cut into pieces
1/4 cup caster sugar
1 egg
 1/2  tsp vanilla essence
1 cup self-raising flour (sifted)
1/2 cup goat milk

Spoon over peaches, smooth out top.
Bake in a moderate oven 180c for 25-30 minutes.
Serve warm with cream , ice cream, or pouring custard.

Text Box: 2 large banana, mashed
Preheat oven to 180c.
Grease 24cmx13.5 loaf tin & line with baking paper.
Sift flour, bi-carb & nutmeg into large bowl.
Add sugar &  dates, mix well
Combine milk, eggs and 
Bananas into bowl.
Text Box: Fold into date mixture & mix well.
Bake 45-50 minutes.
Test with a skewer before removing from oven. 
Cool for 5 minutes in tin before turning out onto a wire rack to cool.
Serve buttered.
