8 shallots or spring onions, chopped.

1/2 cup goat milk.

5 eggs , beaten

2 tbsp oil

2 tsp fish sauce

2 small red chillis, deseeded

And finely chopped.

2 cups chicken stock
2 cloves garlic, crushed
1 tsp soy sauce
2 tsp grated ginger
1 small onion, chopped
1/2 cup cooked rice.
Heat oil in saucepan, stir in garlic, ginger & onion.
Add soy sauce & chicken stock

Cover with tight lid, reduce heat to lowest & cook for 20 minutes.
Remove from heat
Stand for 10 minutes & fluff with fork.
Heat half the oil in 9” omelette pan , add half the shallots/spring onions & half the chillis.

Pour half the combined eggs, fish sauce & goat milk over shallots in pan.
Cook over low heat till 
omelette is just set.
Spoon half  the rice filling into centre fold over & enclose.
Slide onto plate.
Suggest serve with salad.

In a medium size casserole dish 
Combine potatoes, onion & water.
In microwave cook on high  for 8-9 minutes.
